Cytotoxicity Assessment and Nutritional Profiling of Bio-Active Compounds Obtained from Food Waste

The purpose of the study was to evaluate properties by-products obtained from oil industry, identify content bioactive compounds and test safety their reintroduction in food industry. Three sunflower meals after cold-pressing whole (WSM), partially dehulled (PSM) total (TSM) seeds were used. A higher protein, ash fiber for WSM, followed by PSM, TSM meals. Conversely, lipid lower WSM Sunflower are important sources unsaturated fatty acids (more linoleic than oleic acid), ranging between 82.74 86.72%. Additionally, represent a significant source with antioxidant activity. showed highest concentration polyphenols flavonoids, while lowest. values activity compared PSM WSM. weak cytotoxic at concentrations 6.25 mg/mL, as well cell viability which is not affected action but even increases case give potential be added ingredients production functional foods.
